Purslane, a wild herb often considered a weed, is packed with nutrients and health benefits. In this recipe, we’ll turn fresh purslane leaves into a nutritious powder that you can use in smoothies, soups, salads, or as a seasoning.

Ingredients:

  • Fresh purslane leaves (harvested from your garden or purchased from a store)

Instructions:

  1. Harvest or buy fresh purslane leaves. Ensure that the leaves are young and tender for the best flavor and nutrient content.
  2. Wash the purslane thoroughly to remove any dirt or pesticides.
  3. Dry the purslane leaves. You can either air-dry them or use a dehydrator. If you don’t have a dehydrator, you can also dry them in the oven at a low temperature (around 100°F or 38°C) for several hours, checking occasionally to ensure they don’t burn.
  4. Once the leaves are fully dried and crisp, grind them into a fine powder using a blender or spice grinder.
  5. Store the purslane powder in airtight jars to maintain its freshness. It should last for several months when kept in a cool, dry place.
