Raisin Bread Pudding with Icing Glaze
Ingredients:
- 6 cups of cubed bread (preferably day-old)
- 2 cups of milk
- 1/2 cup of sugar
- 3 large eggs
- 1 tsp of vanilla extract
- 1/2 tsp of ground cinnamon
- 1/4 tsp of salt
- 1 cup of raisins
- For the glaze:
- 1/2 cup powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
Instructions:
- Preheat oven: Preheat your oven to 350°F (175°C) and grease a baking dish (around 9×9 inches).
- Prepare the bread pudding mixture:
- In a large bowl, whisk together the milk, sugar, eggs, vanilla extract, cinnamon, and salt until fully combined.
- Add the cubed bread and raisins into the mixture, stirring gently to ensure the bread absorbs the liquid. Let it sit for about 10 minutes for the bread to soak.
- Bake the pudding: Pour the bread mixture into the greased baking dish and spread evenly. Bake for 40-45 minutes or until the top is golden and a knife inserted in the center comes out clean.
- Make the glaze: While the pudding is baking, whisk together the powdered sugar, milk, and vanilla extract to create the glaze. Adjust the consistency by adding more milk or sugar as necessary.
- Glaze and serve: Once the pudding is done, remove it from the oven and allow it to cool slightly. Drizzle the glaze over the warm pudding before serving.
