Ingredients:

  • For the crust:
    • 200g of digestive biscuits or graham crackers (crushed)
    • 100g of melted butter
  • For the filling:
    • 500g cream cheese (softened)
    • 1 cup heavy cream
    • 1/2 cup sugar
    • 1 teaspoon vanilla extract
    • 2 tablespoons lemon juice (optional)
    • 1 tablespoon gelatin (optional, for extra firmness)

Instructions:

  1. Prepare the Crust:
    • Crush the digestive biscuits or graham crackers into fine crumbs using a food processor or by placing them in a plastic bag and crushing with a rolling pin.
    • In a bowl, mix the crumbs with the melted butter until evenly coated.
    • Press the mixture into the bottom of a baking dish or pie pan to form an even crust. Place the dish in the refrigerator to set for about 15-20 minutes.
  2. Make the Filling:
    • In a mixing bowl, beat the cream cheese with the sugar until smooth and creamy.
    • Add the heavy cream, vanilla extract, and lemon juice, and continue to beat until well incorporated.
    • If you want a firmer filling, dissolve the gelatin in a little warm water and add it to the cream cheese mixture, then mix well.
  3. Assemble the Cheesecake:
    • Pour the filling over the set crust and spread it evenly.
    • Cover the cheesecake with plastic wrap or a lid, and refrigerate for at least 4 hours or overnight to allow it to firm up.
  4. Serve:
    • Once set, slice and serve your creamy, no-bake cheesecake. Optionally, top it with fruit or extra crumbs for garnish.
