Packed with nutritious vegetables like cabbage, carrots, and celery, this soup is not only low in calories but also full of fiber to help keep you full. It’s simple to make and can be enjoyed as a light meal or as part of a detox plan.

Ingredients:

  • 1 small head of green cabbage, chopped
  • 1 large onion, chopped
  • 2-3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes (or fresh tomatoes, chopped)
  • 4 cups vegetable broth (or chicken broth for more flavor)
  • 1-2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions:

  1. In a large pot, heat the olive oil (if using) over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
  2. Add the sliced carrots and chopped celery to the pot and cook for another 5 minutes, stirring occasionally.
  3. Stir in the chopped cabbage and cook for another 3-4 minutes, allowing the cabbage to wilt slightly.
  4. Pour in the diced tomatoes (with juice) and vegetable broth. Add the garlic powder, thyme, salt, and pepper. Stir everything together.
  5. Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for about 25-30 minutes, or until the vegetables are tender and the flavors are well combined.
  6. Taste and adjust seasoning as needed with more salt, pepper, or herbs.
  7. Serve hot, and enjoy this nourishing, fat-burning soup!

This soup is perfect for a light lunch or dinner, and it’s great for meal prepping too. Feel free to store leftovers in the fridge for a couple of days!
