These crispy roasted potatoes have quickly become a family favorite! They are perfectly golden and crunchy on the outside, yet soft and tender on the inside. I used to reserve this dish for special occasions, but now, I make it on the regular because it goes with nearly every meal. The combination of herbs and roasted perfection is just irresistible, making it the perfect side dish for any occasion.

Ingredients:

  • 6 medium-sized potatoes (Yukon Gold or Russet work best)
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme (or fresh if preferred)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Prepare the potatoes: Wash and peel (optional) the potatoes. Slice them into even rounds, about 1/4-inch thick.
  3. Season the potatoes: Place the sliced potatoes in a large bowl. Drizzle with olive oil and toss to coat. Sprinkle garlic powder, thyme, paprika, salt, and pepper over the potatoes, tossing again to evenly distribute the seasoning.
  4. Arrange on a baking sheet: Spread the seasoned potato slices in a single layer on a baking sheet. Make sure they’re not overlapping to ensure they roast evenly.
  5. Roast the potatoes: Place the baking sheet in the preheated oven and roast for 25-30 minutes, flipping the potatoes halfway through, until they are golden brown and crispy on the edges.
  6. Serve: Garnish with fresh parsley, if desired, and serve hot alongside your favorite main dish. Enjoy!

This recipe is a simple and delicious way to elevate any meal. Whether it’s with chicken, steak, or even a hearty salad, these crispy roasted potatoes are sure to impress!
