Creamy Sausage and Pasta Soup
This creamy sausage and pasta soup is a hearty and comforting dish, perfect for any season. With savory sausage, tender pasta, and vegetables, it’s a crowd-pleaser that’s quick and easy to make.
Ingredients:
- 1 lb (450g) ground sausage
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 large carrots, diced
- 1 1/2 cups elbow macaroni (or any pasta you prefer)
- 4 cups chicken broth
- 2 cups heavy cream
- 1 cup whole milk
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook the sausage:
- In a large pot, cook the ground sausage over medium heat until browned. Break it up into small pieces as it cooks. Once cooked, remove any excess fat from the pot.
- Sauté the vegetables:
- Add the diced onion and minced garlic to the pot with the sausage. Sauté until the onion becomes soft and translucent, about 3-5 minutes.
- Add the broth and vegetables:
- Add the diced carrots and chicken broth to the pot. Stir everything together and bring to a simmer. Let it cook for about 10 minutes, or until the carrots are tender.
- Cook the pasta:
- Stir in the elbow macaroni (or your choice of pasta) and cook according to the package instructions, about 8-10 minutes, or until al dente.
- Make it creamy:
- Reduce the heat to low and stir in the heavy cream and milk. Simmer for an additional 5 minutes, allowing the soup to thicken slightly.
- Season:
- Season with salt and pepper to taste. Adjust the seasonings as needed.
- Garnish and serve:
- Serve the soup hot, garnished with freshly chopped parsley for added flavor and color.
Pro Tip:
For a thicker soup, add more heavy cream or let it simmer a bit longer to reduce. You can also use a mix of sweet and spicy sausage for extra flavor!
