Recipe: Baked Rice Pudding
Introduction: This baked rice pudding is a creamy, comforting dessert that combines the sweetness of vanilla and the richness of custard. The crispy golden top contrasts beautifully with the soft, creamy rice inside. It’s the perfect treat for any occasion, from a family dinner to a special gathering.
Ingredients:
- 1 cup cooked rice (preferably leftover rice for best texture)
- 2 cups whole milk
- 1/2 cup sugar
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- 1 tablespoon butter (for greasing)
- 1/4 cup heavy cream (optional, for extra richness)
- 1/4 cup raisins (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 2-cup baking dish with butter.
- In a medium saucepan, combine the milk, sugar, and salt. Heat over medium heat until the sugar dissolves and the milk is warm but not boiling.
- In a separate bowl, whisk together the eggs, vanilla extract, and ground cinnamon until smooth.
- Gradually pour the warm milk mixture into the eggs, whisking constantly to prevent the eggs from scrambling.
- Stir in the cooked rice and, if desired, raisins. Mix until well combined.
- Pour the mixture into the prepared baking dish. Use a spoon to evenly distribute the rice and liquid.
- Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the pudding is set. The center should still be a little jiggly but firm enough to hold its shape.
- Let it cool for a few minutes before serving. For extra richness, top with heavy cream or whipped cream, if desired.
This baked rice pudding is perfect for cozy nights and will surely become a favorite dessert!
