Ingredients
For the Baked Chicken Drumsticks
3 chicken drumsticks
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
½ tsp dried parsley
½ tsp dried thyme
Salt & pepper to taste
Optional: 1 tbsp chopped onions or green onions
For the Mashed Potatoes
2 large potatoes, peeled & cubed
2 tbsp butter
¼ cup milk (more if needed)
Salt & pepper to taste
For the Glazed Carrots
1 cup baby carrots
1 tbsp butter
1 tsp honey (optional but delicious)
Pinch of salt
Directions
Bake the Chicken
Preheat oven to 200°C (400°F).
Season drumsticks with olive oil, garlic powder, onion powder, paprika, parsley, thyme, salt, and pepper.
Add optional chopped onions/green onions for extra flavor.
Bake for 35–40 minutes until golden and cooked through.
Make the Mashed Potatoes
Boil potatoes until very soft (about 15 minutes).
Drain, then mash with butter, milk, salt, and pepper.
Adjust creaminess to your liking.
Glaze the Carrots
Steam carrots until tender (about 8 minutes).
Toss in a small pan with butter, honey, and a pinch of salt for 1–2 minutes.
Assemble the Plate
Add mashed potatoes, tender carrots, and your baked chicken drumsticks.
Spoon any pan juices over the chicken for extra flavor.
