🥬 Cabbage Roll Soup with Meatballs
Ingredients:
For the Meatballs:
- 1 lb ground beef (or a mix of beef & pork)
- ½ cup cooked rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 2 tbsp fresh parsley or dill, chopped
- 1 tsp paprika
- Salt & pepper to taste
For the Soup:
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups cabbage, shredded
- 4 cups beef or chicken broth
- 1 can (14 oz) crushed tomatoes
- 1 tbsp tomato paste
- 1 tsp paprika
- 1 tsp dried thyme (or dill)
- 1 bay leaf
- Salt & pepper to taste
Instructions:
- Make the Meatballs
- In a bowl, mix ground meat, rice, onion, garlic, egg, parsley, paprika, salt, and pepper.
- Form into small meatballs (about 1 to 1.5 inches). Set aside.
- Start the Soup
- In a large pot, heat olive oil. Sauté onion, carrots, and celery until softened (about 5 minutes).
- Stir in tomato paste, paprika, and thyme. Cook 1 minute.
- Add Liquids & Cabbage

- Cook the Meatballs in Soup

- Remove bay leaf.
