- 4 large yellow onions, thinly sliced
- 3 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon sugar (optional, helps caramelize)
- 2 cloves garlic, minced
- 1 tablespoon flour
- 1/2 cup dry white wine (optional)
- 6 cups beef broth (good quality)
- 1 teaspoon fresh thyme (or 1/2 tsp dried)
- Salt & black pepper to taste
- 1 baguette, sliced
- 1½ cups grated Gruyère cheese (or Swiss/Mozzarella mix)

- Caramelize the onions
In a large pot, melt butter with olive oil over medium heat. Add sliced onions and cook slowly for 25–35 minutes, stirring often, until deep golden brown. Add sugar halfway if using. - Build flavor
Stir in garlic and cook 1 minute. Sprinkle flour over onions and mix well. Cook for another 2 minutes. - Deglaze
Pour in white wine (if using) and scrape the bottom of the pot. Let it reduce for 2–3 minutes. - Simmer
Add beef broth and thyme. Bring to a simmer and cook 15–20 minutes. Season with salt and pepper. - Prepare the topping
Toast baguette slices until crisp. - Broil
Ladle soup into oven-safe bowls. Place toasted bread on top, cover generously with cheese, and broil 2–4 minutes until bubbly and golden.
